Delicious Nutritious Banana Bread |

This is a healthier version of our favorite banana bread recipe. It has very little fat yet still moist and light. The maple syrup also adds a nice depth of flavor. I use white whole wheat which is lighter, milder and less dense than regular whole wheat and would recommend it for this recipe. King Arthur Flour carries it. Ingredients:
1/4 cup honey |
1/4 cup real maple syrup |
2 teaspoons vanilla |
2 eggs |
3 bananas, mashed |
1/4 cup milk |
2 1/2 cups whole wheat flour |
1/4 cup ground flax seeds |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
3/4 teaspoon salt |
Directions:
1. Pre-heat oven to 350°F. 2. Stir together all the wet ingredients (first 6) in a large bowl. 3. In a smaller bowl stir together the dry ingredients. 4. Add dry ingredients to the wet and mix until basically smooth. 5. Pour batter into a well greased loaf pan and place into the oven to bake for 50-60 min or until tooth pick comes out fairly clean. 6.
