This is a delicious vegan, sweet nut cream from my mom which can be used on top of fresh fruit or a pudding. Ingredients:
1 cup cashew halves |
1 cup canned cream of coconut |
1 teaspoon vanilla extract |
3 tablespoons maple syrup |
1/2 cup soy milk |
Directions:
1. In the container of a blender, combine the cashews, cream of coconut, vanilla, maple syrup and soy milk. Blend until smooth and thick. Transfer to a container and store in the refrigerator. It will thicken even more after a while. |
