A very delicious cake, bursting with lemon flavor. The simple lemon buttercream frosting is the crowning flavor. The optional addition to the frosting is toasted almonds. Has a made-from-scratch taste. Wonderful! Read more ! Ingredients:
1 box duncan hines butter cake mix |
1 box lemon flavored jell-0 |
1 cup boiling water |
3/4 cup crisco oil |
4 eggs |
lemon buttercream frosting |
1/3 cup butter, softened |
1/4 cup crisco |
juice of 1 fresh lemon |
enough powdered sugar for spreading consistency (start with maybe 2 cups) |
Directions:
1. In bowl, add 1 cup boiling water to dry Lemon Jell-0 2. Stir frequently, +cool+ 3. Add box of cake mix to mixing bowl 4. Add oil, cooled Jell-0, beating with an electric mixer on low for about 5. 25 seconds 6. Add eggs, beating for another 20 seconds 7. Then beat on med high for 3 minutes 8. Pour into a greased and lightly floured tube pan 9. Bake at 350 degrees for about 35 minutes....OR until cake shrinks from the sides of pan and lightly browned on top 10. When done, cool in pan on wire rack for about 10 minutes 11. Turn cake out onto cake stand or plate 12. When cake is completely cool, frost 13. LEMON BUTTERCREAM FROSTING 14. With an electric mixer, beat butter and Crisco until creamy 15. Add powdered sugar and lemon juice 16. Beat all until creamy, creamy 17. A little warm water or more lemon juice may be added if needed for spreading the frosting 18. *AFTER FROSTING THE CAKE, TOASTED SLICED ALMONDS MAY BE SCATTERED ON TOP |
