Delicious Kugel With Pineapple |

This was a favorite that my friend's mother used to make at Jewish holidays. I finally got her to give me the recipe when she got sick of me begging for it! Its really easy and so yummy. Ingredients:
8 ounces broad egg noodles, cooked according to package directions |
1 cup fat free sour cream |
1 cup low fat cottage cheese |
1/4 cup butter |
1 teaspoon vanilla |
8 ounces crushed pineapple (undrained) |
2 eggs |
1/4 cup butter |
1 teaspoon cinnamon sugar |
2 cups crushed frosted flakes |
Directions:
1. Drain noodles and place in a large bowl. 2. Add sour cream, cottage cheese, 1/2 stick of melted butter, vanilla, salt, pineapple with juice. 3. Add beaten eggs. 4. Pour into a baking dish sprayed with cooking spray. 5. To make topping:. 6. Melt butter and add cinnamon and crushed flakes. Mix and spread on top. 7. Bake at 350°F for 40 - 50 minutes. |
