Delicious Cupcakes- a Mix Made Better |

These cupcakes start out with a plain old mix...the end result is a very moist and flavorful cupcake! I like the Betty crocker mixes. Make sure all the ingredients are all room temperature. Ingredients:
1 (18 ounce) box betty crocker golden yellow cake mix |
2 eggs |
1/3 cup unsalted butter, softened |
2 eggs |
1/4 cup sour cream |
3/4 cup water |
Directions:
1. Preheat oven to 350°F.
2. Prepare cupcake pans-I use cupcake wrappers - prepare 20.
3. Mix all the ingredients together ( in a stand mixer) and beat for 3-5 minutes or until light and fluffy.
4. Pour into pans.
5. Bake for 15-25 minutes or until light brown and toothpick comes out barely clean.
6. Cool in pans.
7. Frost when completely cool.
