Delicious Cucumber And Pickel And Tomato Salad |

Invited out and asked to bring a salad. I wanted a different spin on cucumcber salad. I discovered by adding chopped half garlic dill pickles and fresh chopped roma tomatoes etc, I came up with this wonderful salad for flavor, taste texture and color. Read more . Hope you enjoy it! Ingredients:
8 kirby cucumbers ( kirby are much smaller than the regular cucumber variety and are often used for pickeling ) |
3 large fresh half brined garlic dill pickles( from the pickle barrel at many gourmet food stores ) |
1 cup greek yoghurt or more if desired |
2 tbs chopped white or red onion |
2 large garlic cloves minced |
1 large roma tomato - or more if desired much meatier and firmer than other varieties |
salt, pepper, salad supreme seasoning or similar ( made from dried herbs etc ) |
fresh dill for garnish( optional ) |
Directions:
1. Wash cucumber, peel here and there to leave on some green skin 2. Cut in half vertically, scrape out seeds 3. Cut into spears and coarse cut into pieces 4. Cut Roma tomato in half, remove seeds, coarse cut 5. Cut pickles in half, cut into spears and coarse chop like the cucumbers 6. Place tomatoes and cucumbers and pickles and onion and garlic in a large bowl. 7. Gently stir in thick yoghurt 8. Season to taste ( the pickles also add some salt ) 9. Chill well |
