I got this recipe from my pastor's wife - it is fabulous. Goes together quick and easy, perfect for a hot summer day. Ingredients:
2 (15 1/4 ounce) cans whole kernel corn, drained |
1/2 cup green pepper, minced |
1/2 cup onion, minced |
1 cup shredded cheddar cheese |
1 cup mayonnaise |
1 (10 ounce) bag fritos corn chips, chili cheese corn chips crushed |
Directions:
1. Mix first 5 ingredients together in bowl. 2. Chill. 3. Just before serving, stir in crushed Fritos. 4. I use a mixture of red and green pepper to give it good color. |
