Delicious Corn Chowder For Autumn |

A bowl of this delicious chowder is great for the cool days of Autumn. Serve with buttered, crusty, earthy bread or for a corn lover's delight....crispy hot cornbread! Ingredients:
4 slices bacon finely chopped |
1 medium onion, thinly sliced |
4 cups cubed, pared potatoes (about 4 medium) |
4 cups fresh corn kernels, cut from cob, or 2 packages (10 ounce size) frozen whole kernel corn, thawed |
1 cup heavy cream |
1 teaspoon sugar |
1/4 cup butter |
2-1/2 teaspoons salt |
1/4 teaspoon white pepper |
2 cups milk |
Directions:
1. In large saucepan with cover, saute bacon, over moderate heat, until golden 2. Add onion, potatoes, and 1 cup water 3. Cover; bring to boil, simmer about 10 minutes or until potatoes are tender but not mushy 4. Remove cover, set saucepan aside 5. In medium saucepan with cover, combine corn, heavy cream, sugar, and butter 6. Simmer, covered over low heat, about 10 minutes 7. Add to potato mixture with remaining ingredients 8. Cook, stirring occasionally over low heat, until heated through 9. DO NOT BOIL |
