This is another family favorite, very tasty and can be served as a breakfast item with maple syrup or honey Ingredients:
1 c. sugar |
1c. butter (you may substitute for 1/2 c shortening, 1/2 c extra virgin olive oil) |
4 eggs |
1 c. colby cheese grated (may use cheddar if you rather) |
1 large can of creamed corn or regular corn- blended |
1 c. all purpose flour |
1 c. cornmeal |
3-4 teaspoon baking powder |
1/4 tsp. salt |
Directions:
1. Preheat oven 350*. Cream butter & sugar, add eggs, then cheese. Mix dry ingredients then add to wet mixture. Pour into a greased and floured 9x13 dish. Bake for 45 minutes or until golden brown. (my family loves this version best) 2. Other options 3. You may add green chiles (1/2 4 oz can chopped fine and seeded) and 4 Tbsp. green onions sprinkle on top before baking |
