Delicious Chicken Marsala Cascone |

Easy to make and delicious. Serve over spaghetti. Ingredients:
4 boneless skinless chicken breasts |
3 tablespoons olive oil |
1 red bell pepper, cut into strips |
1 green bell pepper, cut into strips |
1/2 medium onion, chopped |
6 mushrooms, sliced |
1 garlic clove, minced |
1/2 cup marsala wine |
1 (8 ounce) can tomato sauce |
1 cup marinara sauce |
2 tablespoons beef broth |
Directions:
1. Dunk the chicken breasts in egg and then dredge in seasoned flour (salt and pepper to taste). 2. Bake for 25 minutes at 350 degrees. 3. Heat olive oil in a saute pan over medium-high heat. 4. Add in the vegetables and simmer about 5 minutes. Season with salt and pepper.(optional). 5. Add the tomato and Marinara sauces and the beef broth, reduce heat to medium. Allow the flavors to meld, 2-5 minutes. 6. Add the cooked chicken breasts to the sauce and heat through, about 2 minutes. |
