These are healthy and delicious!!! They are excellent the next day, and amazingly moist!!! This is now my go to Carrot muffin recipe! Ingredients:
1 cup flour |
1/2 cup wheat germ |
1/2 cup sugar |
1 tsp baking soda |
1 tsp baking powder |
1/2 tsp salt |
1 tsp cinnamon |
1 tsp ginger |
1/4 tsp ground cloves |
1/2 tsp nutmeg |
2 eggs |
1/4 cup smucker's sugar free syrup |
2 1/4 cups carrots |
1 1/4 cup apple sauce |
Directions:
1. Puree carrots and apple sauce. Set aside. 2. Mix all dry ingredients well. 3. Add eggs and maple syrup to the carrot puree, mixing until combined. 4. Add liquid mixture to dry and combine. 5. Spoon into well greased muffin tin or into muffin cups. 6. Bake at 350 degrees F for 25 minutes or until a toothpick comes out clean. |
