Delicious And Very Healthy Chick Pea Soup Garbanzo |

This soup is absolutely amazing. It is my own personal recipe, and my friends LOVE IT. Warms you up in the winter without adding those extra calories you don't need! Great source of fibre, protein, complex carbs and veggies all in one bowl. Read more . Not an ounce of unhealthiness in this one! Ingredients:
chick peas (garbanzo in the can) 2 small cans or 1 big one |
1 medium-sized carrot (diced) |
1/2 red bell sweet pepper (diced) |
1 stalk of broccoli- single one with stalk (not entire broccoli, just one crown) (chopped) |
1 medium (yellow) onion (chopped finely) |
1/2 of a medium- sized sweet potato. (chopped and boiled till tender- but not too tender) |
1 garlic, crushed or finely chopped |
1 bay leaf |
thyme- quarter teaspoon |
oregano- 1/4 teaspoon |
rosemary- 1/4 teaspoon |
chicken broth (1 sachet or 1 cube) |
salt to taste |
black pepper- freshly ground |
oilive oil - (2 tablespoons) |
Directions:
1. Put your chickpeas in the pot with 1 cup of water 2. Add bay leaf and your finely chopped onions, and chicken broth into chick peas 3. simmer for about 5-6 mins 4. Remove HALF of your mixture (chick-peas, onions, broth and water) and puree it with a blender. Make sure you have a good amount of the liquid when blending, so that it blends well. 5. Pour the pureed chick peas back into the pot 6. Add all your other veggies, salt, and black pepper and the herbs mentioned above 7. Mix together with oilive oil 8. If thick, add water as you stir. Your soup should be hearty but not extra-thick. 9. Cover for about 20mins 10. Let stand for about 3mins 11. Viola! |
