Delicious (And Healthy) Spicy Salmon Stir-Fry |

This one I came upon by accident but it's so good you would not believe!! Make it as spicy as you like or not at all, it's still absolutely delicious and very healthy! I only gave measurements for 1-2 servings, but adjust accordingly to make more. Enjoy! Ingredients:
5 ounces salmon steaks |
1/3 cup shredded carrot |
1/3 cup mushroom |
1/3 cup frozen broccoli |
1/2 chopped zucchini |
1 teaspoon minced garlic |
1 stalk green onion (chopped) |
1 cup newmans own sesame ginger salad dressing (3/4 cup and 1/4 cup removed) |
1/2 teaspoon red pepper flakes |
1 dash salt (or to taste) |
1 dash black pepper |
1 pinch nutmeg |
1 pinch ginger |
1 pinch onion powder |
nonstick cooking spray |
Directions:
1. Mix 3/4 cup Sesame Ginger dressing, black pepper, salt and onion powder together in small bowl to make marinade for salmon. 2. Cover salmon in marinade for 30 minutes to 1 hour. 3. Heat medium sauce pan and spray with non-stick cooking spray. 4. Stir-fry all veggies in sauce pan. 5. Season with salt, pepper, nutmeg, ginger, red pepper flakes, and 1/4 cup of Sesame Ginger dressing (to taste). 6. When veggies are tender, set aside in small bowl. 7. In same pan, saute' salmon (marinade and all) untill almost done, break apart into small chunks. 8. Add veggies and stir-fry for 5-7 more minutes. 9. Serve and Enjoy! |
