I made this up from what I had on hand and inspiration from other recipes. It's very pretty and would do well for serving guests and family alike. My dw LOVED it and requested I copy it down before she got past the first bite. Ingredients:
1 delicata squash |
1 cup cooked brown rice |
1/2 cup golden raisin |
1/2 cup raisins |
1 cup chopped dried apple |
1 orange, peeled and cut up |
4 -6 walnuts, chopped fine |
1 tablespoon brown sugar |
Directions:
1. Cut squash in half length wise, and scoop out seeds. Place upside down on baking sheet and bake at 350 degrees for 30-40 minutes (or until fork easily pierces flesh). 2. Combine: Rice, orange, raisins, apple, walnuts and brown sugar. Mix thoroughly and stuff into squash halves. 3. Pop back into oven to heat thru, about 10-20 minutes (depending how long you've had the squash out of the oven). 4. Be careful not to over heat as the rice will dry out! I just pop it back in to the oven, turned off, till I'm ready to serve it. 5. Cut into sections and serve. |
