This recipe was taken from Green Show Cookbook published in Wilmington, DE around 1993. This dish is recommended for Summer cookouts. Ingredients:
2 tablespoons butter or 2 tablespoons bacon drippings |
1/2 cup onion, finely chopped |
1 lb okra, sliced |
2 1/2 cups canned tomatoes |
1/4 cup corn |
1 1/4 teaspoons salt |
1/2 teaspoon paprika |
1 teaspoon curry powder |
2 teaspoons brown sugar |
parmesan cheese, grated, as needed |
Directions:
1. Brown the onions in the butter or bacon drippings. Add the sliced okra and sauté for 5-6 minutes. Add the tomatoes, corn, salt, curry powder, and brown sugar. Cover and simmer until the okra is tender. 2. Place the mixture in a casserole dish, sprinkle over Parmesan & paprika. 3. Place in a preheated 350 degree F oven until brown; this should take about 30 minutes or so. Serve. |
