Made this up to change Rudy's potatoes. Ingredients:
2 tablespoons oil |
1/2 cup onion, diced |
2 potatoes, cut into half then 1/3, cut into chunks |
1/2 cup red bell pepper, diced |
1 chili, minced |
1 teaspoon paprika |
1/2 teaspoon turmeric |
1 teaspoon salt |
1 teaspoon pepper |
1/2 teaspoon chili powder |
1 garlic clove, minced |
1/2 teaspoon parsley, dried |
1/2 teaspoon cilantro, dried |
Directions:
1. Fry onions in oil. 2. Add potatoes. 3. Add peppers. 4. Add spices; stir; do not let it burn. 5. Add garlic and herbs. 6. Cover cook on low until browned. |
