24 pickled jalapeno peppers (think i'll try fresh ones) |
1 pound cheddar cheese |
1/2 cup yellow cornmeal |
1/2 cup all-purpose flour |
1 teaspoon salt |
2 large eggs |
4 cups corn oil for frying |
Directions:
1. Cut a short slit in each pepper. 2. Remove as many seeds as possible. 3. Slice Cheddar cheese into 1/4 x1 strips. 4. Stuff each pepper with a Cheddar strip. 5. Break eggs into a small bowl. 6. Beat eggs. 7. Combine cornmeal, flour and salt on a platter (or a paper towel) 8. Dip peppers into the egg. 9. Roll in cornmeal mixture until well coated. 10.
