GREAT SNACK , OR TOPPING WITH FISH, NOTE 2 OZ. OF MORTONS REGULAR SALT CAN BE SUBSTITUTED, AND YOU CAN DOUBLE THE RECIPE OR TRIPLE IT ,USING THE SAME OIL
Ingredients:
1 quart peanut oil
1 lb. package frozen spinach thawed and thoroughly patted dry with paper towels
4 oz. sea salt or kosher salt
Directions:
1. BRING PEANUT OIL TO 345 DEGREES FARENHEIT
2. ADD SPINACH IN BATCHES SLOWLY AND REMOVE FAST AS SOON AS ITS CRISPY, PLACING ON PAPER TOWELS , SALTING EACH BATCH BEFORE YOU ADD NEXT BATCH,1 POUND PACKAGE BEST DONE IN 3 BATCHES
