Deep Fried Eggplant With Honey |

A traditional Andalucian appetiser, I thought it sounded a bit strange - until I tried it. Scrummy. The eggplant needs to soak for a while but this is a quick dish to make. Ingredients:
2 eggplants |
i cup self raising flour, plus 2 tablespoons for covering |
i egg |
milk (quantity varies depending on size of egg) |
2 good pinches of salt |
oil for deep or shallow frying (your choice) |
honey |
Directions:
1. Wash and slice the eggplant across the width into half inch slices, discarding the top and tail. 2. Cover with water to which you've added the salt and allow to soak for 1-2 hours. 3. Sieve the flour, beat the egg and add, 4. Add enough milk, a little at a time, to make a batter the consistency of single cream. 5. Drain and dry the eggplant and coat with the extra flour. 6. Heat the oil, dip the eggplant slices into the batter and fry until the batter is crisp and golden 7. Serve hot with honey (a generous amount) drizzled over to top. 8. I've just had a thought - what about Maple Syrup instead of Honey?? |
