Enjoy this great cobbler from my Sunday School teacher. She is an excellent baker and this is one of her treats we get during bible study on occasion. Yummy, yummy. Enjoy Ingredients:
2-1/2 cups all purpose flour |
2 teaspoons granulated sugar |
1 teaspoon salt |
11 tablespoons cold unsalted butter cut into small pieces |
2-1/2 tablespoons cold solid vegetable shortening |
5 tablespoons ice cold water plus more as needed |
for pear filling |
6 cups peeled and cored pears cut into large chunks |
juice of 1 lemon |
2/3 cup plus 2 tablespoons sugar |
1 teaspoon ground cinnamon |
1/2 teaspoon salt |
1 tablespoon all purpose flour |
3 tablespoons butter chilled but not hard |
Directions:
1. Combine flour, sugar, salt, butter and shortening in food processor or in medium mixing bowl. 2. Pulse machine on and off or cut with pastry cutter or two forks until mixture is crumbly. 3. Add water and pulse or toss with fork until mixture begins to clump together. 4. Gather into a ball sprinkling with a few more drops of water if needed. 5. Flatten into a thick disk then wrap in plastic then chill at least 30 minutes before rolling out. 6. Preheat oven to 350 then combine pears with lemon juice, sugar, cinnamon, salt and flour. 7. Set aside then remove half the pie dough from refrigerator and roll out 1/8” thick. 8. Using fingers tear off some pieces of dough and lay on bottom of casserole dish. 9. Spoon in half of pear mixture then lightly cover with more pieces of pie dough. 10. Roll out remaining pie dough then spoon remaining pear mixture into dish. 11. Top with more pieces of pie dough. 12. Cut butter into small pieces and dot over top of cobbler then sprinkle with remaining sugar. 13. Place in oven and bake until pears are tender about one hour. 14. If crust starts browning too fast cover dish loosely with aluminum foil. 15. Serve hot or warm. |
