easy and yummy salad to serve at a bbq or with Mexican meal Ingredients:
8 ox corkscrew pasta |
3 limes,zested and juiced |
1/4 c vegetable oil |
1/4 c fresh cilantro |
1 tb chopped garlic |
2 c tortilla chips |
2 tsp ea.dijon mustard and honey |
1/2 tsp ground cumin |
6 c chopped romaine |
2 lg. tomatoes,chopped |
1 c each canned black beans and corn kernals |
1/2 c ea. chopped red onions,sliced black olives,and shredded mexican blend cheese |
1 small fresh jalapeno pepper,sliced |
Directions:
1. Cook past according to directions.Drain,rinse in cold water. 2. In bowl,whisk together 1/4 c lime juice,1 tso lime zest,oil,cilantro garlic,Dijon,mustard,honey and cumin. Season with salt and gr. blk pepper,if desired. In seperate bowl,gently toss pasta with 1/2 dressing mixture. 3. In large serving bowl,layer lettuce,tomatoes,pasta,beans,corn,red onions,olives,cheese and jalapeno pepper as desired. Drizzle with remaining dressing. 4. Arrange tortilla chips around top of bowl. Garnish with fresh cilantro ,if desired... |
