Ingredients:

8 cups tart,cooking apples,peeled,cored and sliced |
1 cup sugar |
4 tablespoons cognac |
1 teaspoon lemon peel,shredded finely |
1 tablespoon fresh lemon juice |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/8 teaspoon ground cloves |
2 tablespoons butter |
1 egg yolk,beaten |
2 tablespoon milk |

3/4 cup flour |
1-1/2 teaspoon salt |
1-1/4 cups butter,chilled and cut in small pieces |
1/3 cup shortening |
1 beaten egg yolk |
1/2 cup ice water |
Directions:
1. Pie: 2. Combine apples,sugar,cognac,lemon peel,lemon juice,and spices. 3. Place in a9x1-1/2 round baking dish. 4. Dot with butter. 5. On lightly floured surface roll pastry to a 10 circle. 6. Fit over apple mixture,turn edges under,fluting edge to seal it to pan. 7. Combine egg yolk and milk. 8. Brush over top of pastry. 9. Sprinkle with a little cinnamon. 10. Prick holes in top of crust with a fork to allow steam to escape. 11. Bake in a 425 degree oven for 15 minutes. 12. Reduce oven to 350 degree and continue baking for 45 minutes or till pastry is a nice golden brown. 13. Pie Crust: 14. In mixing bowl combine flour and salt,cut in butter and shortening,tell mixture resembles fine crumbs. 15. Combine egg yolk and water,gradually add to flour mixture. 16. Using fingers,knead lightly to form a ball. 17. Cover and refrigerate about 1 hour. |
