This light and satisfying chocolate cake goes well with the coffee cream cheese frosting. Modified from a recipe in The Bake Sale cookbook. Ingredients:
2 cups sugar |
13/4 cups cake flour |
3/4 cup cocoa powder |
11/2 teasp baking powder |
11/2 teasp baking soda |
1 teasp salt |
2 eggs |
1 cup milk |
1/2 cup vegetable oil |
2 teasp vanilla extract |
2 oz unsweetened chocolate, melted |
1 cup boiling water |
Directions:
1. Preheat oven to 350oF. 2. Grease and flour two 9 round pans. 3. In a large bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt. 4. Add eggs, milk, oil, melted chocolate, and vanilla. Beat on medium speed of electric mixer 2 minutes. 5. Stir in water. Batter will be thin. 6. Pour batter evenly into prepared pans. 7. Bake 30 to 35 minutes or until a wooden pick inserted in center comes out clean. 8. Cool 10 minutes and remove from pans to wire racks to finish cooling. 9. Frost. |
