Description on a recipe group: This is one of the best pies you will ever make, especially if you're a chocolate lover. Its ingredients do not depend on any season, and it is mouth-wateringly good served warm or cold. Ingredients:
1-1/2 cups sugar |
1/2 cup cocoa powder |
1/4 teaspoon salt |
1/2 cup all-purpose flour |
4 eggs, separated |
2 cups whole milk |
1 teaspoon vanilla extract |
1 9-inch baked pie shell, cooled |
meringue ( make from 4 whites ) |
6 tablespoons sugar |
1/2 teaspoon vanilla extract |
1/4 teaspoon cream of tartar |
Directions:
1. Preheat oven to 350°F. 2. Sift together the sugar, cocoa, salt and flour in mixing bowl and set aside. 3. Separate all four eggs. 4. Set egg whites aside in a large bowl for the meringue 5. Put the yolks in a heavy saucepan and beat well with a fork or whisk. 6. Then stir in the sifted dry ingredients alternately with the milk, adding just a little at a time to keep mixture smooth. 7. Cook mixture over medium heat, and add vanilla when it begins to boil. 8. Boil, stirring constantly, until mixture thickens. 9. Remove from heat; beat out any lumps that may have formed. 10. Pour into baked pie shell and top with meringue while filling is still hot. 11. Bake in 350°F oven until meringue is lightly browned, 12 to 15 minutes. 12. To avoid weeping meringue,place on warm or hot filling, not on a cold filling, sealing edges to crust 13. To Make meringue: 14. Beat the egg whites at high speed with an electric mixer until soft peaks form. 15. With mixer running, add the cream of tartar, then gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form. 16. Beat in the vanilla. |
