Decadent Pineapple Upside Down French Toast |

This is incredible. I got this recipe from a friend who made this for us when we visited her bed and breakfast a few years back. This is highly requested at her inn and it is so good. Enjoy Ingredients:
1⁄4 cup unsalted butter |
1/4 cup cream |
1/4 cup firmly packed dark brown sugar |
1/4 teaspoon salt |
15 ounce can crushed pineapple in juice (reserve 1/4 cup juice) |
1/4 teaspoon cinnamon |
2 large eggs |
1/4 teaspoon vanilla extract |
1 cup milk |
12 thick slices sourdough bread |
Directions:
1. Preheat over to 400. 2. Melt butter over moderate heat and stir in sugar until dissolved. 3. Add pineapple stirring well to incorporate. 4. Whisk together eggs, milk, cream, reserved juice, salt, cinnamon and vanilla extract. 5. Lightly grease a rectangular baking dish and spread pineapple mixture evenly over bottom. 6. Dip bread slices into milk mixture and arrange in one layer on top of pineapple mixture. 7. Bake toast in middle of oven 20 minutes or until bread is golden. |
