Decadent Chocolate Cherry Bread Pudding |

This uses a loaf of chocolate bread. You can make your own (some great recipes on this site) or hopefully find some in specialty bakeries. In Maine, there is a company called When Pigs Fly that makes a chocolate sourdough bread that is excellent in this recipe. Ingredients:
3 eggs |
1 (14 ounce) can sweetened condensed milk (not evaporated milk) |
1 cup sweet cherries, pitted and chopped (fresh or frozen) |
1 3/4 cups hot water |
1/4 cup butter or 1/4 cup margarine, melted |
1 teaspoon vanilla extract |
4 cups cubed chocolate bread |
1/2 cup dried cherries |
Directions:
1. Preheat oven to 350ºF. 2. In large bowl, beat eggs; add sweetened condensed milk, cherries, water, butter, and vanilla. 3. Stir in bread and dried cherries, moistening completely. 4. Turn into buttered 9-inch square baking pan. 5. Bake 50 to 55 minutes or until knife inserted near center comes out clean. Cool. 6. Serve warm with ice cream if desired. Store leftovers covered in refrigerator. |
