A hot pudding, great at dinner functions and a great pudding to feed your family, especially in the winter Ingredients:
1 cup self raising flour |
1 pinch salt |
1/4 cup sugar |
46 g butter |
1 cup raisins |
1 lemon rind, finely grated |
1/2 cup milk |
2 cups boiling water |
1 cup brown sugar |
65 g butter |
Directions:
1. sift flour and salt together with sugar. 2. lightly rub in butter with raisins and lemon rind. 3. add milk. 4. mix. 5. spread out evenly in a greased 20cm x 20cm ovenproof dish. 6. put to the side. 7. put boiling water, sugar and butter in saucepan and heat until butter melts. 8. spoon over contents of dish. 9. bake at 180 degrees for about 45-60 minutes. 10. serve while hot. 11. this does have a self sauce but is still lovely with cream or custard if desired. |
