This is another great almost-from-scratch Southern favorite; the only thing keeping it from being totally scratch is the cake mix, and that doesn’t really count, does it? The cream cheese gives it a decadent, rich flavor. Read more . A true Southern chess cake is almost a cross between a brownie and cheesecake, if you can imagine that. I had to have the recipe. Now it’s become a favorite of my family ~ my daughter-in-law would rather have it than a bed to sleep on. I hope you enjoy it. Ingredients:
cake |
the ingredients are simple, but don’t substitute. |
1 box duncan hines butter yellow cake mix |
1 egg |
1 stick of butter (don’t let it get too soft; it’ll make the mixture sticky and difficult to spread). |
topping |
8 oz. cream cheese |
1 box confectioner’s sugar |
2 eggs (room temperature) |
Directions:
1. Preheat oven to 350. 2. Cake: 3. Mix all ingredients and press into a 9”x13” glass baking dish ~ will be crumbly. 4. Topping: 5. Mix all ingredients well ~ will have a batter-like consistency. 6. Pour on top of cake mixture. 7. Bake for 40-45 minutes. Cake is done when center begins to firm and edges have a slight brownie-like appearance. It’s perfect when it’s a very light golden brown. DON’T OVERCOOK! It will finish firming as it cools. 8. Cool for at least 15 minutes on a cooling rack before cutting. 9. M-m-m-m good! Enjoy! |
