Another Sweet Potato Casserole. This is my version. I have been making this for 30 years and it is a family favorite. Mine is made with baked sweet potatoes. I think it makes a big difference. Ingredients:
3 sweet potatoes, baked, mashed (3 cups) |
1 cup sugar |
1 teaspoon salt |
1/2 cup butter (less if you have to) |
2 eggs, beaten |
1 teaspoon vanilla |
1/2 cup evaporated milk |
1 cup brown sugar |
1/4 cup plain flour |
3 tablespoons butter, melted |
1/2 cup pecans, chopped |
1/2 cup coconut |
Directions:
1. Combine all the filling ingredients in large bowl and mix well. (I use my hand mixer for this) 2. Pour into a greased 3 quart baking dish. 3. Mix all topping ingredients. Spoon onto filling mixture. 4. Bake 350 degrees for 30-40 minutes. (depending on the depth of your baking dish). |
