My mom made these for me as a child and they remain one of my favorites today. Easy slice and bake. Dough can be frozen up to 3 months before using. Ingredients:
1 1/2 cups butter, softened |
1 cup brown sugar |
1 cup white sugar |
2 large eggs |
2 tablespoons vanilla |
1/2 teaspoon almond extract |
4 cups plain flour, sifted twice |
1/2 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon cream of tartar |
1 1/4 cups pecans, almonds or 1 1/4 cups walnuts, chopped |
Directions:
1. Cream butter and sugars. Add eggs, vanilla and almond extract. Mix well. 2. Sift together dry ingredients. Add to butter mixture. 3. Stir in pecans or desired nuts. 4. Shape dough in log. Wrap with plastic wrap. Refrigerate for 4-8 hours. 5. Slice into half inch slices or less. 6. Place on ungreased cookie sheet. 7. Bake 375 degrees for 7 minutes. 8. Note: dough may be frozen for up to 3 months. Slice while frozen and bake. |
