This is very much like a pecan pie, but with chocolate and coconut.It is also my husband's favorite. Ingredients:
1 pie crust |
1 cup light brown sugar, firmly packed |
1/2 cup light karo syrup |
1/2 cup dark karo syrup |
1/4 cup butter, melted |
3 eggs, large |
1 pinch salt |
1 teaspoon vanilla extract |
1 cup pecans, lightly chopped |
1 cup coconut, flaked |
1 (8 ounce) package chocolate chips, semi sweet |
Directions:
1. Preheat oven 350 degrees. Bake pie crust 8 minutes. 2. In bowl, combine brown sugar, and both syrups. Mix well. 3. Add eggs, butter, vanilla and salt. Stir in pecan halves. 4. Place chocolate chips in bottom of pie crust. 5. Top with coconut. 6. Pour pecan mixture into over coconut. 7. Bake 350 degrees for 1 hour. Cool. |
