This is the cookie I serve in circle at Samhain. I got it from Roger and Pauline MacLennan. The recipe comes from their very good friend, Jean Lusco, whom they say is the world's best Italian cookie baker ! Read more ! Ingredients:
2 lb. cake flour (1 box) |
2 lb. powdered sugar |
6 tsp baking powder |
7 large eggs |
1 tsp vanilla or rind of small orange |
Directions:
1. In a large bowl, beat eggs and sugar and vanilla or rind. 2. In another bowl, combine flour and baking powder. 3. Sift 3 times. 4. Combine the above - work quickly. 5. Roll out to loaf length and about 3/4 wide - cut into about 1-1/2 lengths. 6. Place on slightly greased cookie sheet. 7. Space - they spread when baked. 8. Cover - let rest 24 hours. 9. Bake 350ĚŠ F for 15 minutes. 10. Makes approximately 93 cookies. 11. As the cookies bake, the top of cookies puff up almost like a meringue and believe it or not they DO LOOK LIKE DEAD MEN'S BONES! 12. They freeze well. |
