Dead Easy Chocolate Raisin Cake |

Absolutely moreish !! Recipe from Peter Bennett. Ingredients:
200 g self raising flour |
25 g cocoa |
250 g brown sugar |
125 g butter |
2 eggs |
2 teaspoons vanilla |
160 ml water |
100 g raisins, chopped |
3 tablespoons brandy, warmed |
Directions:
1. Pre heat oven to 170 C. 2. Grease 20 cm round tin, line base with baking paper. 3. Soak raisins in warmed brandy for 30 minutes. 4. Place all remaining ingredients in a large bowl. 5. Beat with electric beaters on high for 4 minutes till mix is pale and smooth. 6. Add raisins and brandy. 7. Pour into prepared tin. 8. Bake 50 - 55 minutes, cool in tin 10 minutes. 9. Turn onto wire rack. 10. Cake can be frosted or glazed as desired or just served with cream or ice cream. |
