Sure, we all know about the sandwiches and the great turkey soups, but what about an actual stew from the leftovers? This is a good hardy stew that can be changed to your liking. I have used yams in place of white potatoes, sometimes added a sweet winter squash like kabocha or butternut. Start here and make it your own....with my blessings! Ingredients:
4 medium potatoes, diced |
6 carrots, chopped |
3 celery ribs, chopped |
1 large onion, chopped |
2 garlic cloves, minced (or more to taste) |
3 beef tomatoes, seeded and diced (canned ok) |
1 1/2 teaspoons oil |
4 cups chicken broth, unsalted |
4 cups cooked turkey, chopped |
1/4 teaspoon oregano |
1/4 teaspoon sweet basil |
1/4 teaspoon thyme, crushed |
salt and pepper (to taste) |
turkey stuffing (optional, *) |
Directions:
1. Heat 11/2 tsp oil in a large saucpot.Saute onions til soft; add garlic, carrots and celery. Stir-fry for 2-3 minutes. 2. Add potatoes, tomatoes and broth to the pot. Bring up to a boil, then lower to a simmer for 15 minutes. Add turkey and seasonings. Cook another 10 minutes. 3. Salt and pepper as desired. 4. *I love to put a scoop of stuffing in the middle of bowl before adding stew. It takes the place of serving a bread portion. |
