This is really good if your a rhubarb fan as I am, has a wonderful flavor with the orange rind added to it. Enjoy with a little vanilla ice cream on top. Ingredients:
1/2 pound margarine |
2 tablespoons sugar |
2 cups flour |
6 cups cut-up rhubarb |
2 tablespoons grated orange rind |
6 egg yolks, beaten (reserve whites) |
2 cups sugar |
1 teaspoon salt |
4 tablespoons tapioca |
1 cup cream (or half and half or whole milk) |
Directions:
1. Mix margarine, 2 tablespoons sugar and flour together and press 2. in a 9 by 13 inch pan and bake for ten minutes at 400°. 3. Mix remaining ingredients well and spread over baked crust. Bake for 45 minutes at 375°. When just about done, beat egg whites and 4. add 12 tablespoons sugar. Pour over hot dessert and bake at 350° 5. for 15 minutes |
