My mother had me bake this bread on special occasions. This bread taste best with cream cheese spread on it. Ingredients:

2 3/4 cup flour |
1/2 tsp. salt |
2 tsp. baking soda |
1 tsp. baking powder |
1 1/2 cups of boiling water |
2 tbs. margarine or butter |
1 3/4 cup sugar |
1 cup walnuts, chopped |
2 tsp. vanilla extract |
2 eggs |
1 16-oz pkg. pitted dates |
Directions:
1. 1)Preheat oven to 325 2. 2)Grease and lightly flour a 9” x 5”-inch loaf pan. Set aside. 3. 3)Soak date in the 1 1/2 cups of boiling water with the margarine for 20 minutes. 4. 4)In a large bowl add eggs and sugar beat. 5. 5)Add the following ingredients one at a time mixing thoroughly, date mixture, flour, baking powder, baking soda, salt, nuts and vanilla. 6. 6)Pour into the prepared loaf pan. 7. 7)Bake at 325 for approx. 1 hour, or until a tooth pick inserted in the center comes out clean. 8. 8)Cool in pan on a wire rack for 5 minutes. Turn out on wire rack to cool another 5 minutes. 9. 9)Ready to serve. |
