Ingredients:
3/4 cup sugar |
1/4 cup stick margarine, softened |
1 teaspoon vanilla extract |
1 egg |
1 1/4 cups all-purpose flour |
1/4 cup yellow cornmeal |
3/4 teaspoon baking soda |
1/3 cup finely chopped pecans, toasted |
1/3 cup chopped pitted dates |
vegetable cooking spray |
Directions:
1. Cream sugar and margarine at medium speed of a mixer until fluffy (about 3 minutes). Add vanilla and egg; beat well. Combine flour, cornmeal, and baking soda; stir. Add to creamed mixture; beat well. Stir in pecans and dates. 2. Drop dough by level tablespoons onto baking sheets coated with cooking spray. Bake at 350° for 10 minutes; let cool on pans 2 minutes. Remove from pans; let cool completely on wire racks. |
