Sweet treat. Servings are approximate. Prep time does not include chill time. Ingredients:
19 ounce can peach halves, drained |
3 ounce package cream cheese, softened |
1 tsp grated lemon rind |
2 tbsp chopped pecans |
3/4 cup chopped dates |
1/2 cup sour cream |
toasted coconut |
lettuce leaves |
Directions:
1. Combine cream cheese, lemon rind, pecans, dates and sour cream. 2. Put in refrigerator for an hour. Chill peaches also if desired. 3. Just before taking filling out of refrigerator, sprinkle coconut in a shallow pan and place in oven to toast, watching carefully because cocnut burns quickly! 4. Lay lettuce leaves on serving platter or individual plates. 5. Drain peaches and place on lettuce leaves. 6. Remove filling from refrigerator, then spoon into peach halves, dividing equally among the peach halves. 7. Sprinkle with toasted coconut and serve. |
