A couple of our favorites in a cookie square, dates and oats. Ingredients:
3/4 cup of butter |
1 cup of brown sugar |
1/2 tsp of baking soda |
1 1/2 cups of pastry or cake flour |
1 1/2 cups of rolled oats |
filling |
1 package of pitted ddates (1 to 1 1/2 cups) |
1 cup of boiling water |
1/2 cup of brown sugar |
Directions:
1. Cream butter and one cup of brown sugar. 2. Combine soda, flour and rolled oats. 3. Add to creamed mix. 4. Press half into greased 9 inch square pan. 5. Filling: Cut dates. Add brown sugar, cook until thick in boiling water about 10 minutes total time on stove top.. 6. Cool; spread on top of mixture in pan. 7. Spoon remaining mixture on top of filling. 8. Bake at 375 degrees for 25 minutes. 9. Cool, cut in squares. 10. Great with ice cream (butter pecan is to die for) |
