This is one of those that you can bake and serve as a quickie for company or freeze in case company comes! Excellent with espresso or flavored coffees too! Ingredients:
1 cup dried dates, chopped |
1 tblsp powdered ginger (optional) |
1/2 cup brown sugar |
1 tblsp butter |
1 tsp baking soda |
pinch of salt |
pinch of cinnamon |
1 cup boiling water |
1 1/2 cups sr flour |
note: you can use really any type of dried fruit you like, apricots, persimmons, currants, even raisins. with the sweeter fruits use only 1/4 cup of sugar or less as desired. |
Directions:
1. Combine all ingredients in a bowl, add 1 cup boiling water, stir well. 2. Fold in 1 1/2 cups SR flour. Mix well. 3. Bake 25-30 minutes in moderate oven either in well-greased roll tins or bundt pan. 4. Serve warm, sliced and topped with butter or cream. 5. Note: If you freeze for later use, let thaw completely before serving, about 1 hour. |
