Ingredients:
1 cup(s) butter softened |
2 cup(s) brown sugar packed |
3 eggs |
1 teaspoon(s) vanilla |
4 cup(s) flour |
1/2 teaspoon(s) salt |
1/2 teaspoon(s) baking soda |
2-1/2 cup(s) chopped dates |
1 cup(s) sugar |
1 cup(s) fine chopped pecans |
1 cup(s) water |
Directions:
1. in lg. bowl, cream butter and brown sugar until light and fluffy. beat in eggs and van. combine the flour, salt and baking soda; grad. add to creamed mixture and mix well. divide into four portions,chill. in lg. pan,bring dates, sugar and water to a boil. reduce heat to med.; cook until mix is thickened, about 15 min. cool. stir in nuts. on a baking sheet, roll out each portion of dough between two sheets of wax paper into a 12x9 in. rectangle. refrig. for 30 min. remove paper. spread with date mix. tightly roll up each portion jelly roll style., starting with a long side; wrap in plastic wrap. chill 2 hours. unwrap and cut into 1/4-in. slices. place 1 in. apart on greased baking sheet. bake at 350* for 10-12 min. remove to wire racks. |
