DATE PINWHEEL COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Buckley Estate in Garland, Texas in 1994. Ingredients:
1 cup shortening |
4 cups flour |
2 cups brown sugar |
1/2 teaspoon salt |
3 eggs beaten well |
1/2 teaspoon baking soda |
1 teaspoon vanilla |

3 cups chopped dates |
1-1/2 cups water |
1/2 cup granulated sugar |
1-1/2 cups chopped walnuts |
Directions:
1. Cook dates and sugar in water until thick then add nuts and cool. 2. Cream shortening and sugar well then add eggs mixing well. 3. Add flour, salt and baking soda then divide into 2 parts. 4. Roll on floured wax paper approximately 12” round and 1/4” thick. 5. Spread with date filling and roll as jellyroll then chill overnight. 6. Slice into 1/4” slices then bake at 400 for 9 minutes. |
