A great date recipe from the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Chilling time not included in preparation time. Ingredients:
1 lb dates |
1 cup milk |
1/2 cup sugar |
1 tablespoon flour |
1/8 teaspoon salt |
1 egg, well beaten |
1 pastry shells, baked |
whipped cream, lightly sweetened (for garnish) |
Directions:
1. Cut dates in quarters, remove pits. 2. Just barely cover with water and simmer until tender. 3. Drain off any excess water. 4. Mix egg, milk, sugar, salt and flour together well; add to dates. 5. Cook until thick, pour into baked shell and cool in refrigerator. 6. When ready to serve, garnish with whipped cream. |
