A great moist and chewy loaf that is perfect with a hot cup of coffee... Ingredients:
1 lb dates, chopped |
2 c pecans, chopped |
1 c flour |
4 eggs, separated |
2 tsp baking powder |
1/2 tsp salt |
1 tsp cinnamon |
1 tsp vanilla extract |
Directions:
1. Cream egg yolks and sugar. 2. Mix flour, baking powder, salt and cinnamon together. 3. Stir into creamed mixture. 4. Beat egg whites until stiff and fold in. Add vanilla. 5. Drop dates and pecans slowly into mixture, so as not to deflate the mix. 6. Pour into a greased loaf pan and bake at 325 for about an hour. |
