The 2 hours includes oven time. This is a favourite of ours Ingredients:
8oz stoned dates |
2oz margarine |
1 level teaspoon bicarbonate of soda |
pinch of salt |
4oz caster sugar |
8 tablespoons boiling water |
1 egg, well beaten |
8oz self raising flour |
a few drops of vanilla essence, if liked (optional) |
2oz chopped walnuts for the date and walnut version |
1 2lb loaf tin, lined with baking parchment and lightly greased |
Directions:
1. Chop dates and margarine into small pieces 2. Put dates, margarine, bicarbonate of soda, salt, sugar and boiling water into a mixing bowl. 3. Mix until margarine has melted 4. Beat in the beaten egg 5. Fold in the flour 6. Bake at 350 degrees for approx 1 1/2 hours 7. Serve buttered |
