From Mom's recipe box. Ingredients:
1 cup chopped dates |
1 cup raisins |
1 cup chopped walnuts |
2 teaspoons baking soda |
1 1/2 cups boiling water |
1/4 cup butter |
1 1/4 cups sugar |
2 eggs |
2 teaspoons vanilla extract |
3 1/2 cups flour, sifted |
Directions:
1. Combine dates, raisins and walnuts. Sprinkle baking soda over, then pour in boiling water. Let stand until cooled to room temperature. 2. Preheat oven to 350°F Grease and flour 2 loaf pans. 3. Cream butter and sugar with electric mixer (stand or handheld). Add eggs, one at a time, beating well after each addition. Add vanilla and softened fruit (with any remaining water). Fold in flour by hand. 4. Divide batter between prepared loaf pans. Bake 45-60 minutes until toothpick inserted in center comes out clean. Cool in pans 10 minutes, then remove to a rack to cool completely. |
