Ingredients:
1 cup finely chopped dates |
1 cup boiling water |
1 tablespoon shortening |
1 large egg, lightly beaten |
1 teaspoon vanilla extract |
1 1/2 cups all-purpose flour |
1 cup sugar |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 cup chopped pecans |
Directions:
1. Combine first 3 ingredients; let stand 1 hour. Stir in egg and vanilla. 2. Combine flour and next 4 ingredients in a bowl; make a well in center of mixture. Add date mixture, stirring just until moistened. Spoon into greased muffin pans, filling three-fourths full. 3. Bake at 350° for 25 to 30 minutes. |
