Delicious fruit loaf. Spread with butter & enjoy. Ingredients:
8oz pitted dates chopped |
1 tsp baking soda |
1 cup boiling water |
2 tbsp butter |
3/4 cup white sugar |
1 egg |
2 cups self raising flour |
pinch salt |
1 tsp vanilla essence |
Directions:
1. Preheat oven to 325F 2. Place dates in a bowl. Dissolve baking soda in boiling water & pour over dates 3. Beat butter & sugar together until light & fluffy 4. Add egg to butter & sugar & beat again 5. Sift dry ingredients and add alternately with dates and water to egg mixture. Add essence. 6. Spoon mixture in a lined and greased loaf tin and bake for 50-55 mins. 7. Leave loaf in tin for a few minutes before turning out onto a wire rack to cool. |
