Date, Honey and Walnut Loaf |

A favourite with family and friends, not too sweet a good homely cake. Ingredients:
1 cup chopped dates |
1/3 cup butter, softened |
1/3 cup firmly packed brown sugar |
1/3 cup honey |
2 eggs |
2 teaspoons vanilla |
2 cups plain flour |
2 teaspoons baking powder |
2 teaspoons cinnamon |
1/2 teaspoon baking soda |
1/2 teaspoon ground ginger |
1/2 milk |
1/3 cup chopped walnuts |
Directions:
1. In bowl, soak chopped dates in 1/2 cup boiling water. 2. Let cool. 3. In large bowl, beat butter, sugar and honey until fluffy. 4. Beat in eggs, one at a time. 5. Stir in date mixture and vanilla. 6. Combine flour, baking powder, cinnamon, baking soda and ginger; stir in the date mixture alternately with milk, making 3 additions of dry ingredient and 2 of milk and adding walnuts with last addition. 7. Pour into 4 - 5 cup loaf pan. 8. Bake in 350deg. 9. F (175degC) for 1 hour or until tester comes out clean. 10. Allow to cool in pan on rack for 10n minutes. 11. Transfer to rack to cool. |
