This recipe makes a big pan perfect for holiday entertaining. Guests always comment on this cake's wonderful old-fashioned flavor. Shelly Korell, Bayard, Nebraska Ingredients:
2 cups king arthur unbleached all-purpose flour |
1 cup sugar |
3/4 cup shortening |
2 eggs, lightly beaten |
1 cup buttermilk |
1 teaspoon baking powder |
1 teaspoon baking soda |
3/4 cup chopped dates |
1/2 cup chopped walnuts |
Directions:
1. In a bowl, combine flour and sugar. Cut in shortening until mixture resembles coarse crumbs; set aside 1 cup for topping. To the remaining crumb mixture, add eggs, buttermilk, baking powder and baking soda; beat until smooth. Fold in dates and walnuts. 2. Transfer to a greased 13-in. x 9-in. baking pan; sprinkle with reserved crumb mixture. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Yield: 12-15 servings. |
